National Dairy Week
To celebrate National Dairy Week the British Cheese Board (BCB) has been asking our favourite celebrity chefs to reveal some of their top tips for cheese.
National Dairy Week, which runs from the 22nd - 28th February, aims to raise awareness of the nutritional benefits of dairy products, including cheese, and the vital role they can play as part of a healthy, balanced diet.
To celebrate the week that is dedicated to dairy, we have asked Michel Roux Jr, Head Chef at La Gavroche and presenter of BBC2's MasterChef: The Professionals, and Jason Atherton, Chef Patron at Maze, and some of our other favoruite foodie experts to share their top tips on cheese:

If you could choose any British Cheese, what would make it on to your cheeseboard? Dorset Blue Vinny Do you have a favourite British Cheese that is readily available in you local supermarket? Blacksticks Blue What is your favourite type of British Cheese? Any hard cheese, such as Cheddar Have you a favourite recipe or dish that includes cheese? Soufflé Suissesse, combination of Gruyere and Mature Cheddar Do you have a top tip for using, serving or storing cheese? Try serving beers with cheese instead of wine or even cider works well

Lincolnshire Poacher Do you have a favourite British Cheese that is readily available in you local supermarket? Red Leicester What is your favourite type of British Cheese? Cheddar Have you a favourite recipe or dish that includes cheese? It has to be Cauliflower Cheese! Do you have a top tip for using, serving or storing cheese? My top tip for cauliflower Cheese is before making to ‘sous-vide' the cheese sauce for 6 hours!!

Nicola Whiteford If you could choose any British Cheese, what would make its way on to your cheese board? There would have to be a Cheddar, a mild blue, such as Blackstick's, a goat's cheese and a farmhouse Red Leicester. Do you have a favourite British Cheese that is readily available in you local supermarket? I love Gevrik, Cornish Country Larder's small goat's cheese truckle, it's smooth and creamy and perfect for the cheese board or for use in cooking. Cornish Yarg is pretty tasty too and a talking point if you put it on a cheeseboard. What is your favourite type of British Cheese? A mature, farmhouse Cheddar with a good bite and slightly sweet aftertaste Have you a favourite recipe or dish that includes cheese? I make a fantastic pasta dish with chicken, where I cook the chicken with rosemary, crushed garlic, peppers and par-boiled butternut squash and then stir soft goat's cheese into the hot pasta before mixing the two together. The cheese melts and forms an amazing sauce which really complements the meat and veg. Do you have a top tip for using up or storing cheese? There's normally none left to go to waste, to be honest!
